Every year for Easter, one of our neighbors always makes this tasty broccoli salad. Since I couldn’t be home for Easter this year, she was kind enough to share the recipe. I hope you like it as much as I do!
Stephanie’s Broccoli Salad
- 3/4 cup mayonnaise
- 1/4 cup sugar
- 2 Tbsp apple cider or rice wine vinegar
- 1 or 2 heads of broccoli (depending on # of people)
- 6-8 pieces of bacon
- 1/4 red onion
- 1/4 cup raisins
- 1/4 cup shredded cheddar cheese
Prepare the dressing at least a few hours ahead of time. The flavors need time to blend, and the sugar needs to melt so that it’s smooth, not gritty. Mix: mayonnaise, sugar, and vinegar.
Cut flowerets into bite-size pieces & discard stems. Fry bacon so they are crispy, not chewy. Tear into small pieces.
Just before serving: mix the broccoli, bacon, red onion, raisins, shredded cheddar cheese and the dressing.
