1 cup quinoa
2 cups water or vegetable broth or chicken broth
1 package mushroom
1/2 red onion
1 yellow bell pepper
1 tomato
1 bag spinach and arugula
black pepper
juice of 1 lemon
splash of balsamic vinegar
Make the quinoa with the water/broth. Saute the mushrooms, onion, and bell pepper. Mix everything in a bowl with the tomato, spinach/arugula, pepper, lemon juice, and balsamic vinegar.
