Quick Keto-Friendly Curried Cauliflower

The boyfriend and I are flirting with the ketogenic diet. It’s super low carb, moderate protein, and high fat. He has a two week headstart on me. It’s worked really well for him so far. I started eating keto yesterday. So far, I had a hiccup when I left my cheese stick snacks at home today. I had to scramble to the office pantry to buy string cheese. Crisis averted.

For dinner tonight, we made poached salmon, steamed brussels sprouts and the most heavenly curried cauliflower. There are many good grilled and roasted curried cauliflower recipes out there. Most are already keto-friendly by default. I took a few recipes and made some curried cauliflower that was quick and super tasty.

 

Quick Keto-Friendly Curried Cauliflower

Serves 4

Ingredients:

  • 1 lb cauliflower florets
  • 1 Tbsp water
  • 2 Tbsp ghee
  • 2 Tbsp curry powder
  • 1/2 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp garlic salt
  • 1/4 tsp red pepper flakes
  • black pepper to taste
  • 1 small lemon wedge

 

Directions:

Preheat the broiler to its highest heat and move the rack to its highest setting. Rinse the cauliflower florets. Throw them in a bowl with 1 Tbsp water, and loosely cover. Microwave for 2-3 minutes until tender.

Add the next 7 ingredients (ghee to black pepper) and toss to coat each floret. Lay them out in a single layer on a rimmed baking sheet. Broil for 5-10 minutes until there are some nice charred bits on the cauliflower.

Squeeze the lemon over the cauliflower and serve.
