I love Thai peanut sauce. It’s good on almost everything. The thing I’ve realized over the years is that you can make a good peanut sauce out of almost anything. Thus, I’ve listed all of the variations I use in this recipe. The amounts are rough approximations. How you make this sauce all depends on how you like it.
Thai-Style Peanut Sauce
2-4 cloves garlic / 1-2 shallots
1 inch ginger
1-3 Thai chiles / 1 tsp Sriracha / 1/2 tsp red pepper flakes
1/4 cup peanut butter
Tbsp honey / brown sugar
1 Tbsp sesame oil
1 Tbsp rice vinegar / lime juice
1-2 tsp fish sauce / soy sauce
1 Tbsp sesame seeds
Mince the garlic/shallot, ginger, and Thai chiles into a paste. (I like to do this in a spice grinder.) In a small bowl, mix together the garlic/shallot mixture and all other ingredients. Taste it. You may need to thin the sauce with a little bit of warm water.
