Lately, food has been on my mind a lot. As we move into winter, I keep craving all sorts of hearty foods to prepare me for hibernation. The biggest problem that I face is not having other people eat my food. I love to cook. And, I love to eat. But, I hate to cook one meal and then be stuck eating it for the next 10 days. I’ve tried to scale back my recipes, but I can’t really halve and quarter eggs very well. Thus, I am left eating jambalaya and cornbread for the next week.
A few weeks ago, I was on a cupcake frenzy. Since I only cook one deliciously unhealthy thing per week, I made mocha cupcakes with coffee caramel icing and then later I made red velvet with cream cheese frosting. For the first time ever, I got the cream cheese frosting to be the perfect consistency! I was actually able to pipe it on the cupcakes in those pretty little swirls. They were so cute that I thought about not eating them for almost a full 2 seconds.
However, one glorious thing has come out of my cooking frenzy. I now have a well-balanced breakfast every morning, even when I’m running late to class. I make some sort of breakfast food Sunday night and stick it in the fridge to munch off of all week. This week is gingerbread pancakes that I make into peanut butter gingerbread pancake sandwiches. It’s so simple, and so tasty!
Anyway, I probably won’t be cooking until around Thanksgiving. I’m far too busy and my budget always seems to be shrinking. I can’t be wasting my precious cash on coffee caramel buttercreams! I’d rather by beer! (totally joking!) This really just means that I have a few weeks to research and think about the perfect Thanksgiving treat.
